Sea Fresh Farms owns a five acre 50-foot deep saltwater lake (Fulton Lake), off of Black Point Road in the town of Brinnon, Washington. Fulton Lake borders the Hood Canal and is connected to the canal by a covert that is 6 feet in diameter which allows the tide to flow into and out of the lake each day. The unique juxtaposition of the lake and canal creates a natural and ideal environment for growing oyster seed. The water is consistently calm and sheltered which has allowed Sea Fresh Farms to construct custom rafts in the middle of the lake, (200 feet from shore), with a flupsy (floating up well system), where we grow seed for the farms that create our Church Point Oysters. The farm hand-rubs the juvenile oyster seed daily during cleaning, starting the process that creates the desired shape of the tumbled oyster.
Sea Fresh Farms created a co-op system where we partnered with other tideland owners who installed the tumbled oyster infrastructure, and to date Sea Fresh supplies all the seed as well as handles the farming and sales of the oysters. The oysters grow in mesh bags, (125 oysters per bag), with a float attached, so that the bags will flip twice a day with the tide, constantly chipping the bill and creating the most desired deep dish tumbled oyster.
We currently have six farms in operation, four in Oakland Bay and two in Hammersly Inlet. Our farm in Hammersly Inlet is directly across from Church Point, hence our name Church Point Oysters. The oysters go directly from the water into our refrigerated van, and from there they are taken to our facility. The oysters are held in refrigeration in our temperature controlled walk-in cooler until taken to the truck for transport to California. The farm generally packs a couple of extra oysters in each bag of 10 dozen oysters--because we ultimately want to ensure our customer's happiness, not only with quality, but with quantity.
